Because potatoes are so versatile, they can be made into hot side dishes, salads, and even main dishes. Whatever you do with them, potatoes will happily form the basis of a week’s worth of Pesach meals, without ever becoming boring!

My favourite Pesach potato recipes
1. The world’s best roast potatoes
It wouldn’t be seder night without the World’s Greatest Roast Potatoes. My Mum’s recipe – easy to do and still the best! A perfect accompaniment to roast chicken, fish, or the vegetarian alternative.
2. Smoked salmon dauphinoise
More than just a side dish, this unctuous smoked salmon dauphinoise is a meal in itself. A simple green salad is all that’s required to accompany this creamy and indulgent Passover supper.
3. Pesach potato gnocchi
These fabulous gnocchi can be made with cheese, or completely parve, and form the basis for a satisfying Passover dinner. If your kids (or you!) can’t make it through the week without serious pasta cravings, these little Italian-style dumplings may well be the answer! A terrific Passover potato recipe.
4. Tangy potato salad with herbs
Fed up of lunchtime matza? Try a potato salad instead! I love this tangy potato salad with herbs, but you can ring the changes by adding spring onions, hard boiled eggs, radishes, or whatever else takes your fancy. If you’re feeling spicy, try this curried potato salad instead!
5. Scalloped potato roast with rosemary & garlic
This delicious dish is a family favourite that’s easy to make and looks the business! It’s a regular at our Friday night dinner table, and since it’s completely Pesach-compatible, we can keep it on the menu!
6. Crispy potato wedges with garlic & herbs
You can vary the seasoning on these crispy potato wedges according to your taste, and they make a delicious alternative to chips. Try dunking them in sour cream or garlic mayonnaise, or for a simple Pesach supper, serve with runny fried or poached eggs for dipping.
7. Jacket potatoes
DH insisted I add jacket potatoes to this list. He has a point. Scrub your potatoes, stab a few times with a fork, and bake at 190C for at least an hour, until the skin is crisp and the inside is soft and fluffy. A good jacket potato needs nothing more than a generous knob of butter, but makes a more substantial meal with sour cream, grated cheese, tuna, roasted vegetables, humous (for the kitniot eaters) or egg mayonnaise. Simple but delicious!
8. Spinach souffle potatoes
Of course, if you really want to go to town with jacket potatoes, with just a little extra effort you can transform them into these wonderful spinach soufflé potatoes – no kitniot or gebrochts here! If you’re not a big fan of spinach, you can substitute another green vegetable, or omit it entirely and add a good handful or two of grated cheese instead.
9. Roasted baby potatoes with mushrooms & onions
This is an awesome all-in-one side dish, that combines roasted potatoes with golden crispy onions and rich, flavoursome mushrooms. Simply add some baked fish or crustless quiche, and dinner is ready!
10. Potato and carrot layer bake
My Mum’s potato and carrot layer bake is another easy and delicious side dish. You get your spuds and vegetables all in one go, so simply serve with the protein of your choice, and you’re ready to eat!
11. Bubble and squeak
And finally, what better way to use up your seder leftovers than bubble and squeak?! My recipe uses mashed potato, cabbage and onions, but you can mash up any cooked potatoes and vegetables you like – I’ve used leftover roasties before now, just give them a good mash to get everything well mixed, then shape into patties and fry. Top with a poached or fried egg for a decadently simple Pesach lunch or supper.
