Italian Tuna and White Bean Salad

Tuna’s hearty texture, coupled with the white beans’ creaminess, provide a satisfying dish that’s both filling and nutritious. But what really sets this Italian tuna salad apart is the choice of additional seasonings and flavours – punchy capers, sharp onion, and fragrant fresh herbs elevate store-cupboard basics into something spectacular! Make sure you choose good quality tuna in olive oil, and the best cannellini beans, to ensure this dish is never ordinary, but always extraordinary!

This delicious Italian tuna salad is based on nutritious whole foods that form the basis of a healthy diet. Tuna is a great source of protein. It is also an oily fish which provides omega-3 fatty acids, essential for cardiovascular health. Omega-3s have also been linked to eye health and prevention of vision problems.

Diversity is key to a healthy diet. You may have heard about “eating the rainbow” or “eating 30 plants per week”. Both of these ideas encourage consuming a wide range of different – and different coloured! – plant-based foods. This helps to ensure that our diet includes as many different micro-nutrients such as polyphenols and trace vitamins and minerals as possible.

Ingredients in Italian Tuna and White Bean Salad

Creating the delicious Italian tuna and bean salad to fill your lettuce cups is very straightforward. You will need the following ingredients:

  • Canned tuna in olive oil.
  • Canned or pre-cooked white beans – I prefer cannellini beans but you can also use haricot beans, white kidney beans or navy beans.
  • Capers – for a salty tang.
  • Mild red or white onion to add depth and savoury flavour.
  • Fresh parsley – you can also use other fresh herbs or soft greens like chives, basil, rocket (arugula) or watercress.
  • Lemon juice to make a zesty dressing.

Depending on how much oil is on the tuna, you may also need to add a little extra virgin olive oil.

Step-by-step guide to combining ingredients

  1. Transfer the tuna and its oil from the can to a mixing bowl, and flake the fish into chunks.
  2. Finely chop the onion into small dice.
  3. Drain the white beans and rinse under cold water to remove any excess salt.
  4. Chop the parsley. Chop the capers if they are large (leave whole if not).
  5. Add all the prepared ingredients to the mixing bowl, and gently combine the flaked tuna, beans, onion, capers, parsley and lemon juice.

Your Italian tuna and white bean salad is ready! Now, simply spoon into lettuce cups and serve.

How to make Lettuce Cups

Selecting the right lettuce is key to creating the perfect vessel for your Italian tuna and cannellini bean salad. I like to use Little Gem or Red Gem lettuce. These provide flexible yet sturdy cupped leaves that are ideal for holding the hearty filling. They are just the right size for a single portion, and their crisp yet tender texture enhances the overall dining experience.

Gently remove the leaves one at a time from the lettuce, taking care not to tear or damage them. Then be sure to wash them carefully to remove any dirt, debris or any little critters that might be hiding!

How to wash lettuce cups

To ensure your lettuce cups are crisp and clean, simply follow these washing and drying tips. After separating the leaves, give them a quick rinse under cold water to remove any dirt or debris. Then place in a colander, inside a large bowl of cold, salted water. Allow the lettuce to soak for around 5 minutes.

Lift up the colander and allow the water to drain back into the bowl. Inspect the water for bugs or dirt – if you can’t see any, you’re good to go! If you find anything untoward, dump out the water and repeat with fresh water until no more dirt or debris is present.

I usually do this process using the bowl and basket of my salad spinner. Then I can simply pour off any remaining water and spin the lettuce leaves dry. If you don’t have a salad spinner, then gently pat the leaves dry with a clean kitchen towel or paper towels and spread them out in a single layer to evaporate any residual water. Adequate drying is important to prevent the leaves from getting soggy when served.

Shaping lettuce cups

Once washed and dried, carefully trim the stem end of your lettuce leaves to create even, open cups. Be careful not to tear the leaves. For any oversized leaves, you can also trim the edges to create a more uniform cup size – scissors are a good tool for this.

The result should be a set of neat, sturdy lettuce cups ready to be filled with the flavourful Italian tuna and white bean salad.

How to serve the salad in lettuce cups

Once the lettuce is ready and the salad is prepared, place the leaves on a platter, shaping them into cup-like structures. Spoon some of the tuna salad mixture into each lettuce cup, taking care not to overfill. Garnish with an extra sprinkle of fresh herbs, cherry tomatoes or lemon slices.

If you have more salad than will fit in the lettuce cups, spooning the remainder onto slices of sourdough or other delicious bread is great way to eat it!

Ingredients
  

  • 160 g tinned tuna in olive oil
  • 1 small red or white onion, or shallot (approx. 2-3 tbsp)
  • 115 g tinned white beans, e.g. cannellini (approx. ½ a tin)
  • 1 lemon, juiced
  • 1 tablespoon small capers in brine, drained
  • 2-3 tablespoon fresh parsley
  • 1-2 little gem or similar lettuces

Instructions
 

  • 160 g tinned tuna in olive oil
    Without draining, tip the tuna into a bowl, and flake with a fork.
  • 1 small red or white onion, or shallot
    Peel and finely dice the onion.
  • 115 g tinned white beans, e.g. cannellini
    Drain the beans and rinse to remove any excess salt. You need about half a can of beans, so I suggest rinsing the whole can then weighing out 115g. The remainder can be refrigerated and used in another recipe.
  • 1 tbsp small capers in brine, drained, 2-3 tbsp fresh parsley
    Chop the capers if necessary, and the parsley – keep some parsley back to garnish.
  • 1 lemon, juiced
    Add the onion, beans, capers, parsley and lemon juice to the tuna and gently mix to combine. Set aside to allow the flavours to mingle while you prepare the lettuce cups.
  • 1-2 little gem or similar lettuces
    Carefully separate the leaves from the lettuce. Wash and dry well, trim the ends, and form into cups. Arrange the lettuce cups on a serving platter.
  • Carefully spoon the tuna and bean mixture into the lettuce cups. Drizzle with any dressing that remains in the bowl, and sprinkle with the reserved parsley.

Notes

This Italian tuna and bean salad is also delicious not served in lettuce cups! Put individual servings in small dishes are cups, or simply present a bowlful for diners to share. The salad is delicious with crusty sourdough or Italian bread to soak up any excess dressing.
