Triple chocolate cookies with cocoa nibs & chocolate chips

These cocoa nib cookies are crispy on the outside, chewy in the middle, and studded with rich chocolate chips and crunchy, intensely flavoured cocoa nibs.

Ages ago we hosted an event in our house – nothing massive, just a talk by an interesting guy, followed by tea and biscuits. The organisers brought a selection of baked goods, but it seemed rude to host the event and not provide something that I’d made myself.

I decided to make cocoa nib cookies. I love the crunch they add to an already-delicious chocolate cookie!

Easy chocolate chip cookies

I love this recipe because it produces fancy looking two-tone chocolate chip cookies, but is really very simple! The dough is a cinch to make – my daughter Kipper helped with the weighing and measuring, and the Kenwood mixer did all the hard work.

Once mixed, then you simply divide the dough into two and add cocoa to one half. Scooping a bit from each half as you make each cookie gives them the fabulous ‘black and white’ appearance once baked.

Of course you can skip the cocoa and make them all ‘white’, or add cocoa to all the dough and make them all chocolatey. Or you can mix half and half as above, and then make some of each kind of cookie. So many options!

Triple chocolate cookies!

These cocoa nib cookies are super chocolatey as they contain three different cocoa/chocolate products – cocoa nibs, cocoa powder, and chocolate chips. Each adds something special to the final product, so the cookies have a rich chocolate flavour, melty chocolate chips, and a wonderful crunch from the cocoa nibs.

What are cocoa nibs?

Cocoa nibs are tiny pieces of naturally fermented, dried and roasted cocoa bean. As such they are the raw ingredient for chocolate, but are far less processed. They also contain no added sugar.

Cocoa nibs contain a number of essential minerals, including iron, zinc, magnesium, manganese and phosphorus.

Ingredients in cocoa nib chocolate chip cookies

Apart from the cocoa nibs, the ingredients are all pantry staples. You can buy cocoa nibs from supermarkets, health food stores, and specialist chocolate shops.

To make a batch of yummy cookies for yourself, you will need:

  • Plain flour – also called all-purpose flour
  • Dark chocolate chips
  • Cocoa nibs
  • Cocoa powder
  • Butter or margarine – depending on whether you need them to be parve (dairy free) or not
  • Golden caster sugar – or use regular white sugar
  • Bicarbonate of soda – to help them spread and rise
  • Salt – to bring out the flavour of the chocolate

Vegan cookies

Since they contain no eggs, if you use margarine instead of butter these cocoa nib cookies are vegan (and parve). Yay!

Never mind all that, I hear you cry. How are the cookies?!

Well, they got rave reviews all round.

These delicious chocolate cookies are crisp on the outside, slightly chewy in the middle, and studded with rich chocolate chips and crunchy, intensely flavoured cocoa nibs. If you were feeling decadent, you could sandwich two together with some chocolate ganache. Or chocolate ice-cream. Now there’s an idea…

My daughter Kipper was very keen to get involved with quality control of these cookies, making sure to test them very thoroughly. I suspect that given half a chance, she would have ‘quality checked’ every last cocoa nib cookie!

Ingredients
 
 

  • 135 g plain flour
  • ½ teaspoon bicarbonate of soda
  • ½ teaspoon salt
  • 25 g dark chocolate chips
  • 20 g cocoa nibs
  • 1½ teaspoon cocoa powder
  • 115 g butter or margarine
  • 130 g golden caster sugar

Instructions
 

  • Preheat the oven to 190°C (375°F).
  • Mix the flour, bicarbonate of soda, salt, chocolate chips and cocoa nibs together. Set aside.
  • Cream the butter and sugar until light and fluffy. Add the flour mixture and continue to beat until the mixture comes together to form a dough.
  • Transfer half of the dough to another bowl, then mix the cocoa powder into the remaining half, until well combined.
  • Use a dessertspoon to scoop up some of each of the plain mixture and the cocoa mixture into a marbled blob, and dollop onto a lined baking sheet. (My blobs weighed around 22g each). Leave plenty of room between the blobs of dough as they will spread in the oven.
  • Bake in the preheated oven for 10 minutes until they cookies have spread out and started to turn golden at the edges. Allow to cool and firm up for a few minutes on the tray, then transfer to a cooling rack until completely cooled.
  • Enjoy!

Notes

If you prefer fully chocolate cookies, add 3tsp of cocoa to the full batch of dough together with the flour. If you prefer ‘white’ cookies, skip the cocoa altogether. If you prefer some of each, make the dough as above but prepare individual cookies from one or other batch of dough, without mixing them. 
Any cookies that aren’t eaten immediately will keep for a few days in an airtight box.

    These triple chocolate cookies sound so good. Love the look of them and that they contain cocoa nibs too. Crisp on the outside and chewy in the middle is my favourite sort of biscuit.
